Summer Dinner ideas

Whether you are headed to the pool, park, or a picnic I’ve got you covered! We spend a lot of time at the pool in the summer or at park picnics and I don’t always want to eat at the pool grill. Here is a list of our favorite easier dinners to go:

 

-Sandwich night (PBJ, turkey, ham)

-Salad sandwich or scoops (tuna, chicken salad, egg salad)

-Pasta salad with plant protein noodles

- Scoop of chicken salad over naan bread

-Cheese quesadilla

-Ham crescent roll ups

-Chickpea salad and cheese crackers

-Whole wheat wrap with deli meat, chicken, or PBJ

-Hard boiled eggs

-Chicken sausage

-Hummus tomato sandwich

-Cream cheese bagel

-Edamame and rice

- Protein pancakes

-Pesto Noodles

-Cold pizza

-Grilled chicken in a wrap with lettuce and tomatoes

-Turkey/ham roll ups

-Chicken, tomato, mozzarella salad with rolls

-Snack board dinner (cheese, meat, nuts, hummus, crackers/bread, dried fruit)

-Mason jar salads (salad dressing at the top)

-Quiche

-Lemon orzo pasta salad

Packing Tips:

 

-On Sunday or a couple days prior, make a large batch of a grain or noodle to repurpose. Such as making noodles for spaghetti one night and pasta salad the next night.

-Use crockpot for slow cooking meats and eat when you get home while you feed the kids a the pool

-Have a more “gourmet” lunch and simpler dinner if your kids are home for lunch (meaning switch lunch for dinner type foods).

-Use these mats underneath your eating place.
