Rainbow Salad on repeat

My secret to helping kids love veggies? Serve them how you’d like to eat them! And serve them often, not just at dinner. If your child is a picky eater or just selective on their veggie choices- have them help you make this! You literally can’t mess this salad up. It’s not fancy, but its quick, nutrient packed, and delicious. Use fresh or canned- add it all in there.

 Here’s what I include

Tomatoes

Corn

Cucumber

Bell Pepper

Fresh Basil

Carrots (thinly chopped for kids)

Chick Peas

White Beans

Olives

Salt, Pepper, Garlic Powder

 

Dressing- any Greek dressing, tahini dressing, or oil and hummus

 

Chop it all up and add dressing, I think it gets better with time! Eat it as is or add diced chicken or top with quinoa. We’ve done it all and it’s so good! It makes for a good fridge dump salad. I love making it on Sundays and eating for a couple days. I don’t have this, but I feel like it would really come in handy for this salad!
